A root cellar is not a specific structure. It is a set of conditions: cool, moderately humid, and dark. Many homes already have a space that meets these criteria without any construction.

Root vegetables stay edible for months after harvest when held at refrigerator temperatures with moderate to high humidity. The problem with an ordinary refrigerator is that it removes humidity as it cools, and most household refrigerators are too small for a meaningful vegetable harvest. A root cellar solves both problems by providing a larger cool space that retains natural humidity.
Modern households have several practical options that do not require building a traditional root cellar. An unheated basement corner on the north wall, an unheated garage in a moderate climate, an insulated cooler in a cold crawlspace, or even buried containers in the garden can all provide usable cold storage. The approach depends on the climate, the available space, and the volume of produce to be stored.
The first step in any root cellaring project is measuring what you have. A thermometer-hygrometer combination (available for $15 to $30) placed in the candidate space over a few weeks in late fall will tell you whether the space meets the temperature and humidity requirements for your target crops before you invest further.
Conditions by crop
Different crops require meaningfully different conditions. Storing garlic with carrots, or apples with potatoes, leads to poor results for both. Grouping crops by their requirements produces much better outcomes.
Cold and moist: 32 to 40°F, 90 to 95% RH
Carrots, beets, turnips, parsnips, rutabagas, celeriac. These crops store best near freezing with very high humidity. Pack in damp sand, sawdust, or perforated plastic bags to maintain humidity around individual vegetables. Expected storage duration: 4 to 6 months.
Practical setup: buried container outdoors, unheated basement with humidity source (tray of water).
Cold and moist: 38 to 40°F, 80 to 90% RH
Potatoes need cool temperatures but slightly less cold than root vegetables. Temperatures below 38°F convert potato starches to sugars, making them taste unpleasantly sweet. Darkness is critical. Light exposure causes greening and solanine production. Store in burlap bags or wooden crates in complete darkness. Expected storage: 4 to 6 months.
Cure freshly harvested potatoes at 50 to 60°F for 2 weeks before moving to cold storage to allow skin to set.
Cold and moist: 32 to 40°F, 80 to 90% RH
Store apples and pears away from other produce. Apples emit ethylene gas that accelerates ripening and sprouting in nearby vegetables. Late-season storage varieties (Fuji, Winesap, Braeburn, Cortland) hold for 3 to 5 months. Early-season varieties (McIntosh, Gala) are not good storage candidates. Check periodically and remove any that show signs of rot.
One bad apple will accelerate deterioration in surrounding fruit. Check weekly.
Cool and dry: 50 to 60°F, 60 to 70% RH
These crops need drier conditions than root vegetables. Garlic and onions in high humidity develop mold and rot quickly. Hang them in mesh bags or cure on wire racks in good air circulation. Winter squash (butternut, acorn, Hubbard, pumpkin) stores well at 50 to 60°F for 2 to 6 months depending on variety. Thick-skinned, well-cured squash stores longest.
Cure winter squash at room temperature for 10 to 14 days before cold storage to harden the skin.
Practical setups
Most households are not going to build a traditional root cellar. These options work with existing spaces in most homes.
The northeast corner of a basement (or north-facing wall) stays coolest. Partition the corner with insulated walls on the two interior sides, leaving the exterior foundation walls uninsulated. Add a vent to the outside with a damper for temperature control. A small window works. This is the closest to a traditional root cellar without excavation, and in most climates it will maintain 35 to 45°F through winter with good humidity.
Works in: cold climates with basements
An unheated detached garage in a moderate climate (not extreme cold) can provide usable cold storage in insulated containers or coolers. The temperature will vary more than a basement setup but can work for shorter-term storage. A thermometer helps identify the coldest spot and track conditions through the season.
Works in: moderate climates, not extreme cold
A metal trash can buried to its rim in a garden bed, filled with root vegetables packed in straw or leaves, and covered with a lid weighted by a board, provides cold and humid storage naturally from soil insulation. Works well for carrots, beets, and turnips in climates where the ground does not freeze solid. Accessible as needed through winter.
Works in: climates with moderate freeze depth
A large insulated cooler placed in an unheated crawlspace, porch, or shed moderates temperature swings. On cold nights, the insulation prevents produce from freezing. On warmer days, it holds overnight cold. Adding a jug of water that freezes overnight provides additional cold mass. A simple but effective option for small-volume storage.
