Fermentation is the preservation method that requires the least equipment, costs almost nothing, and produces food that is genuinely useful for both daily meals and long-term storage.

How it works

The bacteria do the work. Salt sets the conditions.

Lacto-fermentation does not require adding bacteria or cultures. The Lactobacillus bacteria that drive fermentation already live on the surface of fresh vegetables. When you salt and submerge vegetables in brine, you create conditions that favor Lactobacillus and suppress pathogenic organisms: the salt concentration is too high for most harmful bacteria, and Lactobacillus is salt-tolerant.

The bacteria consume sugars and produce lactic acid. Within 48 to 72 hours, the pH of a properly salted ferment drops below 4.6, the threshold below which C. botulinum cannot produce toxin. The ferment is self-protecting.[1]

The two requirements that make this work: adequate salt (2 to 5 percent by weight) and keeping vegetables submerged below the brine line. Vegetables exposed to air above the brine can develop mold. Everything below the brine ferments safely.

Your first ferment

Sauerkraut. Two ingredients, one technique.

Sauerkraut is the standard starting ferment because it requires nothing beyond cabbage, salt, and a clean jar. The process introduces every concept you need for more complex ferments.

Shred and weigh the cabbage

Remove outer leaves and core. Shred thinly, roughly 1/8 inch. Weigh the shredded cabbage. You need 2 percent of that weight in non-iodized salt. One pound of cabbage takes approximately 1 teaspoon of kosher salt. Measuring by weight is more consistent than by volume.

Salt and massage

Toss the cabbage and salt together in a large bowl. Squeeze and massage firmly for 5 to 10 minutes. The salt draws water out of the cabbage through osmosis, creating the brine. You will see liquid pooling in the bowl as you work. This is the brine the cabbage will ferment in.

Pack the jar tightly

Pack the salted cabbage into a clean wide-mouth mason jar, pressing firmly after each addition so brine rises above the cabbage. All cabbage should be submerged below the brine. Leave 1 to 2 inches of headspace at the top for expansion. Weigh the cabbage down below the brine with a smaller jar filled with water, a zip-lock bag filled with brine, or a dedicated fermentation weight.

Cover and ferment at room temperature

Cover the jar with a cloth, loosely fitted lid, or an airlock. Do not seal it airtight. Fermentation produces CO2 that needs to escape. Keep at room temperature (65 to 75°F). Taste starting at day 3. A short ferment of 5 to 7 days produces a mild, lightly tangy kraut. Two to four weeks produces the sharper, more deeply flavored version. Move to the refrigerator when it tastes right to you. Cold slows fermentation significantly.

Check daily; push submerged if needed

Check once a day. If any cabbage has floated above the brine line, push it back below. If the jar was tightly packed and has not produced enough brine to cover, make additional brine by dissolving 1 teaspoon of non-iodized salt in 1 cup of filtered or boiled-and-cooled water, and add enough to submerge the cabbage.

Once you have sauerkraut down: Kimchi uses the same principle with napa cabbage, gochugaru, ginger, garlic, and scallions. Lacto-fermented pickles use a prepared brine (1 tablespoon non-iodized salt per cup of water) rather than dry-salting. Curtido (Central American fermented slaw) uses the same dry-salt method as sauerkraut with shredded cabbage, carrots, and oregano. The technique transfers directly.

Troubleshooting

What you might see. What it means.

Bubbles forming

Normal. CO2 is a byproduct of fermentation. Bubbles in the brine or rising to the surface mean active fermentation. This is what you want to see in the first few days.

Brine turns cloudy

Normal. Cloudiness is caused by lactic acid bacteria and yeast activity. A clear brine early in fermentation that turns cloudy is a sign the process is working. The finished sauerkraut will have cloudy brine.

White film on surface

Probably kahm yeast, harmless. Flat, smooth or wrinkled, white or off-white. Skim it off and ensure all vegetables are submerged. The ferment is fine. If the film is fuzzy or colored, see below.

Fuzzy colored mold

Discard. Fuzzy green, black, pink, or orange growth on vegetables above the brine indicates mold contamination. This typically means some vegetables were not kept submerged. When in doubt, throw it out. Start again.
